We've had successful classes in exploring the components of milk and the fresh products that can be made with them, including buttermilk, cream and butter, fresh cheese and whey. We hope to build up to soft and hard cheeses and allow you to make your own cheese to age in our "cave" in future classes.
At Windsor Dairy, the farmers make the cheese. This ensures the quality of every aspect of the cheese making process. We begin by managing our own pastures, which are filled with native grasses, wildflowers, and herbs. Our herd of mostly Brown Swiss cows has continual access to these pastures. As a result our cows make the most delicious and nutritious milk we know of. Our cheese is made in the most traditional manner possible – the milk goes straight from the cows to the cheese vat. We add only the simplest and finest ingredients to the milk to create our cheeses. Windsor Dairy is committed to producing the finest quality dairy products you can buy.
Our Glendevey cheese is a great snacking cheese and is our version of the classic swiss gruyere. It is a full flavored cheese that is a favorite among gourmet chefs for seasoning fondues, gratins, and casseroles. Glendevey is the sharpest of our cheeses with a complex flavor that is both nutty and floral. You don't, however, have to be a gourmet to enjoy this cheese.
Glendevey is sold in mini wheels (approx 1.5-2 lbs) and mini wheel half & quarter pieces and is a natural rind, firm cheese.

The Buckhorn is made with a mesophilic culture much like that used in Cheddar or Jack cheeses, this natural rind cheese has a unique flavor and a creamy texture reminiscent of a havarti cheese. Buckhorn is excellent on a cheese plate and is wonderful in a fondue pot or melted in soups.
Buckhorn is sold in wedges, mini wheels (approx 1.5-2 lbs) and mini wheel half & quarter pieces.

This medium flavored and slightly crumbly textured cheese is reminiscent of a traditional farmhouse English cheddar. A favorite with kids at the farmers' market, Nakhu is perfect for snacking, sandwiches, and classic macaroni n cheese.
Nakhu is sold in wedges or large wheels (approx 20 lbs).

Nakhu reserve is aged more than 6 months and has the distinctive sharpness of an aged cheddar.

The mildness of the jack cultures in our McIntyre showcase the superior flavor of our raw milk. Excellent to serve to anyone who fears "smelly" cheese, McIntyre is also a great all around cooking cheese to use in American or Mexican dishes, or anywhere a milder cheese is preferred.
McIntyre is sold in wedges or large wheels (approx 20 lbs).

Cultures imported from Switzerland bring out the natural sweetness in our milk and lend Colona an Emmental-like flavor. Like the classic Emmental cheese from Switzerland, our cheese is made with raw milk from mountain cows that graze in fields full of grass and wild flower herbs. Colona is great alongside toast and jam for breakfast and is perfect to serve on a cheese and fruit plate accompanied with wine.
Colona is sold in wedges or large wheels (approx 20 lbs).

Colona reserve is aged more than 6 months and has a deeper, richer, and more complex flavor than its younger predecessor. It also has the characteristic "holes" of the famous Swiss cheese which are formed through a fermentation process. Similar to a fine brandy, Colona Reserve gains a sweet richness with age. Unavailable at this time.

Windsor Dairy is owned and operated by Drs. Meg Cattell & Arden Nelson, board certified bovine veterinarians. Windsor Dairy employs weekly bacteria testing to insure that your milk is free of bacterial pathogens.
In May of 2005 the Colorado state legislature recognized that people should have the freedom to consume raw milk. It is now legal to drink fresh milk from a cow that you own.
This means you can buy a share of a cow in our herd and board it at our farm. In exchange you have access to the most delicious and nutritious milk we know of. Please review our FAQs to find information on how to get started.
You may visit your cow during our pick up hours, and we encourage you to do so. We perform a service for you by feeding, caring for, and milking your cow, and you benefit by being able to utilize the milk.
